I have to be honest, I can’t bring myself to eat most salads. I really don’t like lettuce, brocoli, cauliflower, spinnach, collards, tomatoes, cucumbers, and many other vegetables. It’s a problem.
And you’re a vegan? That is a pretty big problem. You can’t be hesitant to try new things—add some zest to your veggies by using spices like ginger, cayenne, cumin, curry, etc. Squirt lime or lemon juice on top of your salads. I like yogurt as a good salad dressing, but keifer is a great vegan alternative to yogurt.
Also, obviously, berries are great and super-healthy. Blue, black, rasp, straw, etc.
Same with nuts. If you’re vegan, you gotta make sure you’re getting enough protein, vitamin b12, omega 3s, iron and calcium, especially since of our ages. Nuts are great in all of these. Flax seeds, walnuts, cashews, pistachios, almonds, hemp seed, etc. Mix yourself a healthy nutty/seedy trail mix for a great easy snack. Throw in some dried fruit if you want to, too.
Grains. Make sandwiches with whole wheat bread…add whatever you like. I don’t know if you have any restrictions as to the politics of how your food is grown (local, organic, conventional, seasonal, etc)—explain your basic diet here and I’d love to help you out!
I cook all the time, I’m a HUGE foodie and I love spreading knowledge about food and nutrition and wise eating for a sustainable planet and all that bullshit. Anything that you can post that would let me know what kind of foods you like to eat or how your typical diet is looking, post it and I’ll gladly respond.
Well I used to be a pretty strict vegan. Unfortunately, now I’m only vegan at home and school, and vegetarian otherwise because I have a carnivorous girlfriend who I go out to dinner with a lot, and there’s not many vegan options for dining around here. Plus I’d hate to make her family buy me vegan stuff, especially when I’m such a picky eater.
Unfortunately I can’t cook much outside of burritos, quesadillas, nachos, pastas, pizza, sandwiches and really basic uncreative stuff like that. It’s not that I’m a terrible cook, I was just never taught how to cook things and my parents do the grocery shopping so I never really get much opportunity to explore things that they don’t already buy.
So my diet ends up being a lot of fake cheese in stuff like burritos or pizza, then a lot of processed shit because I end up microwaving boca burgers or amy’s macaroni and soy cheese because I don’t know how to make veggie burgers or vegan mac and cheese from scratch. Then throw in some fruits and nuts and you have my diet.
As you can see, I’m still a little stuck in the mindset that I just need to make vegan versions of dairy and meat dishes instead of trying new things.
